Crispy Squares

I have a sweet tooth and love to bake with my girls, so I always jump at the chance when they ask if we can make Crispy Squares or other treats. This recipe is quick and easy, and it's healthier than traditional crispy square recipes. It contains alternatives to refined granulated sugar and corn syrup, which is always a plus for me. It is also vegan friendly, gluten free and non-GMO (if you substitute the butter). A delicious treat for the whole family no matter what your preference is!

Time commitment (approximately 15 minutes)

3 tablespoons of butter (use Organic Raw Coconut Oil or Earth Balance buttery spread if you prefer vegan)

1 package (10 oz) of Dandies Vegan Marshmallows (regular or mini marshmallows)

4 cups of Nature’s Path Organic Crispy Rice cereal

Kitchen utensils

1 tablespoon

1-cup measuring cup

Spatula, wooden spoon or wax paper

Medium or large saucepan

1-1/2-quart 8 or 9-inch pan or dish (square)

Knife for cutting into squares

  1. In a medium or large saucepan, melt 3 tablespoons of butter (coconut oil or Earth Balance buttery spread) over low heat. Add 1 package (10 oz) of Dandies Vegan Marshmallows and stir until the marshmallows are completely melted.
  2. Remove saucepan from the heat and stir in 4 cups of Nature’s Path Organic Crispy Rice cereal. Stir until the Crispy Rice cereal is well coated in melted marshmallow.
  3. Using a spatula, wooden spoon or wax paper, evenly press the mixture into 1-1/2-quart 9-inch pan or dish (coat the spatula and dish with a bit of the butter, coconut oil or Earth Balance buttery spread first to help avoid sticking).
  4. Let it cool before cutting into squares and enjoying. Best if served on the same day!
